Mexican Chicken Soup

My mother got this recipe while she was visiting my sister in California. I have had it twice at her place and it was delicious! It is easy to make in a slow cooker.

Layer the following in your slow cooker:
4- 6 medium sized chicken breasts, cut into pieces.
1 sweet potato chopped
1 large sweet yellow onion (Vidalia or other)
3 cans (14 oz)
3 cans chicken broth
1 teaspoon cumin
1 teaspoon oregano
(Cook in slow cooker for 5 hours on high)

Then add:
1 dark green pepper chopped
1 small bag of frozen corn
(Cook another 30 minutes)

Serve into bowls with:
handful of grated sharp cheddar cheese
corn tortilla chips (stick into the bowl!)
sprinkle of fresh cilantro
Some people also like sour cream!
